This is a delicious rum cocktail by Bart Miedeksza at Crossroads – a bar in Camden, North London – and it’s one you can make at home with just a bit of effort.

In the recipe here Bart is using a pre-mixed vermouth and tonic product, but if you don’t have that you can just add the vermouth and tonic separately.

Recipe: –

First, make the bay leaf cordial: –

7 Bay Leaves
300ml Water
300g Sugar

Add all ingredients to a pan and bring to the boil, stirring to dissolve the sugar. Simmer for 15 minutes and then leave to cool. Remove the leaves and store the liquid in a sterilised bottle. Done!

Then, to make the cocktail: –

20ml Bay Leaf Cordial
30ml 3-Year-Old White Rum

Build in a rocks glass, add ice and mix gently.

Top up with a Vermouth & Tonic Spritz, or add vermouth and tonic separately.

Mix again and garnish with a fresh bay leaf.
