The Southside cocktail is a mix of gin, mint and lime, served straight up. At Funkidory – a cocktail bar in Peckham, South East London – owner Sergio Leanza has put his own spin on this classic.

The South East Side switches the mint for fresh sage and introduces a local ingredient – sparkling mead – to make this long, refreshing, fruity and herbal cocktail. Delightful!

Recipe: –

Sage Leaves
30ml London Dry Gin
15ml Lemon Juice
10ml Sugar Syrup
80ml Sparkling Mead

Add all ingredients to a highball glass, fill with ice and mix well.

Top with crushed ice and garnish with a sprig of sage.
